LactoSave® was developed as a citrus-based functional matrix obtained through a clean process free from effluents and harsh chemicals. It functions as a physical/structural stabilizer, body agent, sustituto natural de gomas y almidones modificados, and a reducer of syneresis and phase separation in fermented, UHT, y sistemas acidificados.
.
1. El desafío técnico
Each dairy category breaks differently:
- fermented systems face post-fermentation syneresis and gel instability,
- acidified UHT beverages face pH + heat stress, risking precipitation and viscosity collapse,
- processed cheese systems face texture collapse when caseinate is reduced,
- cream cheese systems require elastic, stable texture with hot/cold spreadability and no syneresis.
A scalable solution must stabilize colloidal structure, retain water, support texture, and remain robust under processing.
.
2. La solución AHORRAR: LactoSave as a Functional Citrus Matrix
LactoSave delivers multifunctionality by structuring the continuous phase, improving moisture retention, and increasing matrix cohesion. This supports texture and physical stability, reduces reliance on artificial thickeners, and enables clean-label positioning and cost optimizatio without sacrificing consumer acceptance.
.
3. Mecanismo de acción dentro del sistema
Across dairy systems, LactoSave works through:
- water retention and controlled viscosity contribution, reducing free-water mobility and separation,
- estructuración de microredes, improving cohesion of protein and fat phases and stabilizing dispersed elements,
- estabilización física, reducing sedimentation and precipitation risks in complex matrices.
.
4. Resultados prácticos observados (Casos validados)
Case A — Fermented yogurt with fat reduction
Fat was reduced from 3.5% a 1.5% con 0.7% LactoSave, while syneresis decreased from 12 mL to 1.2 mL after 7 días. The product maintained creamy texture and natural shine, achieved an additive-free label, and fully replaced guar gum and modified starch.
Case B — Acidified UHT dairy beverage (pH 4.0 + fruit pulp)
Using0.6% LactoSave, carrageenan and CMC were replaced while achieving visual and physical stability for90 días. Viscosity was maintained at28–30 cP con excelente flujo, and the final label contained only6 ingredientes.
Case C — Processed cheese with caseinate reduction
A15% reduction in base caseinate was achieved using0.8% LactoSave, delivering elastic texture, no syneresis, and excellent spreadability, alongside reduced cost and clean-label improvement.
Case D — Cream cheese with starch and caseinate replacement
Partial replacement of modified starch and caseinate with0.9% LactoSave maintained hot and cold spreadability with no syneresis and homogeneous texture. After30 días, no visible syneresis was observed and the sensory profile remained equivalent to the CMC + starch standard. The final label eliminated two synthetic additives and delivered an estimated8% cost reduction with validated technical performance.
.
Conclusión
LactoSave is a scalable citrus-based matrix for modern dairy reformulation. By integrating moisture retention, colloidal structuring, and stability under acidic and thermal stress, it enables clean-label simplification, texture preservation, and cost optimization across multiple dairy categories supporting faster, lower-risk innovation in a highly competitive market.
